Food that holds up in heat
The USDA's guidance is that perishable food should not sit out for more than two hours, dropping to one hour above roughly 90 degrees Fahrenheit. That is the real constraint on an outdoor spread and it points you straight at the food that was designed to keep.
Works outdoors: cured meat, hard cheese, marinated vegetables, olives, dips, breads, robust salads with sturdy leaves or grains, anything pickled.
Does not: soft cheese, which becomes a puddle within the hour; mayonnaise-based salads; delicate leaves, which wilt; anything that needs to stay cold to be pleasant.

Serve in stages
Rather than laying everything out at once and watching it sit in the sun for three hours, bring out a third at a time. It keeps food within the safe window, it keeps it looking fresh, and it limits how long anything is exposed to insects.
A tray with a lid makes this genuinely easy: build three trays in the morning, keep them in the fridge, bring them out in sequence.
