Two boards, not one
This is the whole trick and it is counter-intuitive because the instinct at scale is to go bigger.
One enormous board means one place for twenty people to stand, which becomes a queue and then a crush, and it means the people at the back get a picked-over board. Two boards at opposite ends of the room create two serving points, spread the crowd, and let you take one away to rebuild without there being no food anywhere.

The timing plan
- The day before: shop. Cheese is better bought a day ahead than an hour ahead, and you will not be fighting a crowd.
- Four hours before: build both boards completely, minus crackers and anything that browns. Cover with cling film, refrigerate.
- Forty-five minutes before: take board one out. Cheese needs this time to come up to temperature.
- Fifteen minutes before: add crackers, bread and cut apple or pear with a squeeze of lemon.
- When board one is two-thirds gone: take it away entirely, bring out board two. Do not top up in place.
Overflow onto platters
Beyond about twenty-five people you want platters alongside the boards, holding the things that do not need to be on wood — olives, marinated vegetables, anything wet. It spreads the crowd further and it means the boards stay boards rather than becoming overloaded.

As a starter, roughly 2.5 pounds of cheese and 2.5 pounds of cured meat, plus crackers, fruit and accompaniments. If the board is the whole meal, double both and add substantial items like bread, dips and something roasted.
What size board do you need for 20 people?
A single board would need to be 20 to 24 inches or more, and even then it creates a bottleneck. Two 16-inch boards at opposite ends of the room feed twenty better, because two serving points halve the queue.
How do you keep a charcuterie board full during a party?
Build a complete second board before guests arrive, keep it covered in the fridge, and swap it in when the first is picked over. Topping up a half-eaten board always looks like a half-eaten board.
