Where the two-to-three figure comes from

Three things each add glasses to a party, and they stack.

  • Abandonment. Over a three-hour evening people move rooms, set a glass on a windowsill and forget it. This alone is worth roughly half a glass per guest.
  • Switching wines. Anyone going from white to red takes a clean glass. If you pour two wines, assume most guests do.
  • Breakage and the dishwasher. One glass in the sink is one glass out of service, and you do not want to be running a cycle at nine o’clock.

Work backwards from bottles, too

A 750ml bottle gives five standard five-ounce pours, or about four if you are pouring like a host rather than a restaurant. So eight guests across an evening is three to four bottles, not two — and it is worth checking that number against your glass count, because the two mistakes tend to arrive together.

Storage is the real constraint
